Medium dry, with medium umami and medium+ acidity. Medium bodied sake, with pronounced lactic characteristics very reminiscent of yogurt.
Incredible Yamahai, made even more unique by the house yeast used in the production of this sake. An outstanding yamahai with a medium finish, and all the lactic goodness one would expect from a non-sokujō shubo.
