Junmai-shu (pure rice sake) made by reproducing the production process from the end of the Edo period to the Meiji 30s.
Very dry mouthfeel. I was surprised at how dry it was, as I had imagined it to taste sweet like Muromachi 😳 The aftertaste has bitterness, astringency, and the delicious taste of rice.
