■Ichimiya Sake Brewery "Iwami Ginzan", Shimane Prefecture/Ota City
Rika Asano and Satoki Asano, a young couple, are the toji (master brewers), and the husband is a former nurse.
They use a fantastic sake rice called "Kairyo Hattan Nagare," which is difficult to cultivate.
Sakonishiki, Shimane's sake rice, is a cross between Kairyohattannagare and Kinmonishiki.
The couple came together; Rika is bright and cheerful and friendly, while Reiki is taciturn and shy. It was a very smiling and heartwarming booth.
The special junmai Hiyahoroshi.
The flavor spreads and then the acidity is felt, and it's delicious.
Junmai Ginjo Rika Koryoryu Hachiganryu
This sake is named after the toji (master brewer). It has a beautiful and gentle impression, just as the name implies. I really wanted to try Kaihatanryu 😁.

There are 3 types of new products: Hi-ire, Nigori, and Nama. Among them, I tasted the raw one. It was thick, sweet, fruity, fresh, and a little sour.

I had bought Yukika at Hanshin Department Store in Amagasaki in the past. I found out that it was Mr. Rika, the toji (master brewer), who was standing in the store at that time😅.

None of them left much of an impression on me, but I thought the Yukika was as tasty as ever. It was sweet and strong, like a strong calpis soda.
I would like to try it again because Sugidama-san in Kyoto sells Iwami Ginzan.
I liked being a hoot. Not that I didn't try, of course, and I consider myself pretty in my own way.
But the people around me have been more than I expected, which is unreasonable, violent, and sometimes cruel to me, as I have interpersonal fears.
I also want to be an open-minded person.
I don't make waves over a little or a lot of things. I want to be the kind of person who can laugh and forgive even if someone is jealous or abusive.

Lightly colored but almost transparent
Gorgeous aroma. Pineapple, banana, apple, a little mossy, but mostly fruit.
The label says to chill it, but I'm sorry, but it was served at room temperature. Sweetness is the main flavor, with just a hint of acidity, and a mineral texture and astringency on the finish.
Serve lukewarm. It is not sticky sweet, but the sweetness is too much. The balance is just barely maintained by the minerality.
I'm not sure about this one. I think there is a hesitation in the way the taste is created, not in terms of technique, but in terms of identity and commercial aspects.
