I get lots of stone and orchard fruits on the nose: peach, apricot, nectarine, apple, pear. There's certainly an earthy umami element like mushrooms in there too. Quite big and bold on the palate. The alcohol is a nice punch, and carries a tingly acidity and rich umami, with more nectarine and apricot, some grape, dried fruits. It feels thick and sweet, but has a dry finish. The alcohol continues to tingle for a bit after it's all gone, leaving a slight stickiness on the lips. 4.5/5

Purchased at a souvenir store in the Shinkansen ticket gate of Kyoto Station. Apple-like aroma. The impression of a slight alcohol taste (not unpleasant) after a strong acidic and astringent taste. Went well with bonito sashimi.

This is the 3rd hiyaoroshi ✨Haneda Sake Brewery. We had a dinner party at my husband's parents' house on this day, so this is the 2nd bottle of 4 gougo bottles of Haneda-san that we bought at the recent Hankyu Brewery Festival. I asked about the rice used at the event, and they said it was Kyo no Kiraki. It is a raw sake with a rice polishing ratio of 60% and an alc of 17.5. It was much drier than I expected and I wondered where was the flavor of maturity that is typical of hiyaoroshi. Where is the aged flavor that is typical of hiyaoroshi sake? The dryness of this sake makes it suitable for a mealtime drink, but the high alcohol content makes it very drinkable.

Tonight's sake is Haneda Summer Junmai Sake from Kyoto 🍶. The other day at the sake corner, a beautiful blue bottle labeled "Kitayama, Kyoto's local sake" caught my eye and I bought it! It is a refreshingly dry sake, and as the temperature rose a little, I could taste the full flavor of the rice. It has a nice sharpness and is suitable for a mid-meal drink! The rice used is "Kyo no Kiraki", a rice suitable for sake brewing produced in Kyoto. The brewery is located in the town of Shuyama, Keihoku, Ukyo-ku, which is said to be rich in nature. I remember that when I was staying at a boarding house in Kyoto, I often saw buses bound for the Shuyama bus terminal... The image of Kyoto Gozan Okuribi (Bonfire of the Five Mountains) with a brown rice crepe The shape is like a yatsuhashi-style 😁. Purchased at Kyoto Station Shinkansen premises. While I was shopping for sake, I was allowed to try a sample at a special place, and it was delicious. It is a dry junmai sake made from 100% "Kyo-no-kiraki" rice produced in Kyoto, and is fruity and completely refreshing. A perfect drink for summer dishes. We immediately enjoyed it with pickles we bought as a souvenir.

The moment I drank it, I was like, "Isn't it spicy?" and kept my cool. At first, the aroma of rice is fluffy, but then a sharp spiciness comes in, and it finishes dry. It is a dry type of sake. But it went well with the mackerel bar sushi.
