Local sake from Keihoku, Kyoto.
I bought this Junmai Ginjo-shu the other day in Kyoto after tasting a variety of sake from this brewery.
It was a crisp, light, dry, and easy to drink bottle. 🙆♂️
Unfiltered unpasteurized sake
Rice polishing: 55
Alcohol: 17.5%.
Karakuchi summer sake
Simple, refreshing taste with no filtered water 👍.
It goes well with Japanese food.
This sake is often used at ryotei (Japanese-style restaurants) and ryokan (Japanese-style inns) in Kyoto City.
When I tasted it, I felt a strong alcohol taste, but when I drank it later, it was a wonderful sake with a dense sweetness and moderate smoothness.
It has a lightness in the mouth that makes you think it is light. But then you realize that it is heavy. The mellow aroma of rice passing through the nose is good. I was convinced that it is an unfiltered, unpasteurized sake.
