In the mouth, a light sweetness with a hint of fresh peach, while a bitter bitterness emerges from the back. As you swallow, the complex sweetness, bitterness, and acidity overlap and transform into umami, rising sharply. The lingering taste is dominated by a nutty flavor and strong bitterness. It is a light food sake when served chilled, and its umami increases as the temperature rises. The bitter bitterness is impressive. It is delicious!
