Today we have "Kappa" super dry +10❗️ from Yamagata's Yonezuru with an impressive picture of a kappa, a slightly darker ooze, and overall light white in appearance. The aroma is junmai raw sweet. After a sip, there is a mild mouthfeel followed by a tingling sensation on the tongue. However, there is not much of a spicy, super-harsh taste, but rather a dry, refreshing taste. Then the sweet aroma of junmai raw passes through the nose. ❗️❗️

Hatsukappa's EPISODE While I was looking at the refrigerator at my usual liquor store, a madam came in right after me and asked, "Do you have any bottles of Kappa? I love Kappa. I heard her saying to the owner, "We'll stock it next time," etc. I didn't think anything of it at the time, but after I left the store, I couldn't stop thinking about kappa, so I decided to try one more place, and I was in a hashigo-shakaya state. We drove about 30 minutes and got kappa at the next liquor store. This store also had some sake that I was interested in, so I ended up buying 6 bottles just that day. Since I have some stock at home, I'm wondering if I finally need a refrigerator dedicated to sake. Have any of you ever been to a liquor store where you bought a lot of sake? Well, Kappa has a dry rummy taste and a tingling sensation, and it is refreshing. It has a tangy, refreshing, but thin and cloudy taste. I think you will love the taste of Kappa. Tonight's entrée was a ehomaki, sardines, and isotempura of sasamimi, etc., which were delicious, although I was full.

In the mouth, a light sweetness with a hint of fresh peach, while a bitter bitterness emerges from the back. As you swallow, the complex sweetness, bitterness, and acidity overlap and transform into umami, rising sharply. The lingering taste is dominated by a nutty flavor and strong bitterness. It is a light food sake when served chilled, and its umami increases as the temperature rises. The bitter bitterness is impressive. It is delicious!
