At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Second New Year's Holiday Accompanied by this sake Umami, neat, with a slight bitterness in the aftertaste! I like it very much. It goes well with tako-wasabi and kinpira gobo (burdock root) as a side dish.

Echigo-Yuzawa Ponshu-kan We had a 1-coin tasting at the sake tasting machine at the Echigo-Yuzawa Ponju-Kan. Junmai Daiginjo named after the founder of Shirotaki Sake Brewery in Kozensuijo. Junmai Daiginjo, named after the founder of Shirataki Sake Brewery in Kozensuijo, ranked No.1⁉️ in the popularity ranking of Ponshu-kan. I wonder if it was the best on that day. It seemed to be the store's recommendation. It was the most popular sake in the store, and it was very reasonable for a Junmai Daiginjo, so I brought it back home. It has a fresh and beautiful aroma. And it has a sweet and deep flavor of rice. It has a wonderful balance of sweetness and sharpness. Even I, who am a slow drinker, could drink it easily. Accompanied by Mentaiko mayo in cod roe, deep fried cartilage, takuan (pickled radish), chikama (fish cake)........ Oh man😅. Besides, it's running out kind of fast 🫢. And, somehow... I was curious about the slim bottle form. I looked at the label. 630 ml. Ah, I see... No, I mean... I mean, it's only half of the total 😅. but still, hmmm 😑... But It's good because it tastes good😊👌👌 Let's drink it!

Shirotaki sake from Echigo-Yuzawa's "Shirotaki" and "Kamizen Josui" breweries. Minatoya Tousuke is the name of the founder. It has been quite a while. Junmai Daiginjo with 50% polishing. It has a peachy, elegant aroma and a smooth mouthfeel👍.

The mouthfeel is rather dry. Then it starts to feel sweet, and then it is dry. Which is it? It has a moderate depth of flavor, with a hint of daiginjo aroma. It seems to go well with all kinds of food. This time, I paired it with sukiyaki (Japanese style of cooking) with melted egg. It was a good match. It matched the sweetness of the sukiyaki and did not lose out to the richness of the soy sauce.
