A woody scent with a honeyed sweetness and a bit of cedar The taste is quite strong lactic acidity and a relatively mellow flavor in the Shinsei, as well as a woody and aged taste. It has a deep and refreshing taste with a certain richness. It's a nice drink, and it's just plain good.

Name of rice: 100% Shinjo (improved) Yeast used: Society 6 The sake from Shinsei Hanpukai was often on my timeline and I wanted to try it. We found it in an izakaya and naturally ordered it. The aroma was mild, and the taste was sweet and sour. I thought it tasted just like lapis, and I heard that Yamayu itself was the forerunner of Colors. I think Shinsei's sake has a really unique taste. 7/10

生酛木桶純米 美山錦 口に含んで直ぐは、まあるくて、そのあと甘さと苦味がジンワリ広がります。フレッシュ感、良いですね。 大好き度数９１点❤️
