This sake was brewed with "Hakkami Yeast of Hirosaki University" provided by Professor Akio Tonouchi of the Faculty of Agricultural and Life Sciences, "Matashigura" rice grown in Nishimeya Village, and water from the Shirakami Mountains. The sake had a strong sweetness in a refreshing finish. It is indeed Shirakami Shuzo.
It's an unadulterated Yamahai Junmai Ginjo original sake that has been aged well and is flavorful and crisp, he said.
