Buri Sashimi, Buri Daikon, Aonori Tofu, and of course, hot sake 🍶.

My memory of the last time I drank this sake was a bit fuzzy, so I tried it again warmed up.
A classic medium-bodied sake with a mellow, mellow, dry mouthfeel that is reminiscent of old-fashioned sake.
Great with sashimi and chilled tofu!
It has a strong and somewhat comforting flavor that reminds us that Niigata's traditional sake is not only light and dry.

I drank too much whiskey and shochu before drinking this sake, so I can't remember what I thought of it.
Echigo Toji Honjozo Dry 1800ml
One glass of Sansho was not enough, so I opened a bottle of Niigata Sake, Tamarei Dry Touji, Echigo Toji, a gift from a neighbor. I kept it at room temperature during the summer, so it may have become old. I thought it would be better to heat it up, but I had it on the rocks.
Echigo Toji, the sake of the time, modern or classical? But both are sake.

Echigo Toji is the current main brand of Kinshi-Haii Sake Brewery. I would love to buy it and drink it, but I haven't gotten around to it yet;
My friend mentioned this Echigo Toji as his favorite sake. I think it is a typical Niigata honjozo, but drier than average and has a strong body. For the rocks (although today's Nakano-san is not rock-like...) I'd rather have this one than a modern one👍.
Nakano-san's show was great, but my mind went to Cornelius at 10pm. I'm looking forward to seeing Oyamada-kun's resurrection 😊.
A gift. This is my first honjozo sake (sake made by adding brewing alcohol to rice and koji with a milling ratio of less than 70%). (Apparently it is a sake made from rice and koji with a milling ratio of less than 70% and brewing alcohol added.)
Here are my impressions.
The aroma is mild.
When you put it in your mouth, it feels a little thick on the tongue. The spiciness spreads quickly and then quickly fades away. The aftertaste is short.
Firmly dry!
