Shimizu Sake Brewery is located in Wajima City and was damaged by the Noto Earthquake.
◉Noto Homare Junmai Ginjo
This sake was originally made before the earthquake and was bottled at Nakamura Sake Brewery in Kanazawa. It is original, but has been matured for a year and a half and is a bit sweet and tasty.
It has been a year and a half, but the effects of the earthquake are still present.

It has a clean and elegant aroma and taste with an added umami flavor.
Although the rice polishing ratio is 60%, it has a complex flavor. It is supposed to be a junmai sake, but it is unusual in that it gives me a hangover. There is a bit of bitterness.
When I went on a trip to Kanazawa last year, I told the liquor store that I like dry wine, and they recommended this bottle to me. It is crisp and dry, but has a refreshing taste and a sweet rice aftertaste.
Currently, orders seem to have been suspended due to the Noto earthquake, but I highly recommend sake lovers to try it.
Nigori sake series from Ishikawa. The supernatant is already quite sweet from the aroma. It has a rich sweetness like caramel. It is the complete opposite of the dry Honjozo sake we used to drink in the past, which is super sweet. There is no gassiness and the sugar content is 14.2%. Even when nigori ingredients were mixed in, it became only slightly dry. There is little acidity and a little astringency. The honjozo is very clear and dry, so it is a different story.
