Tasted it at Sakesp and enjoyed it so much I took it home. It was green apple-like and full-bodied. It has a nice crispness to it with a good rice flavor. We enjoyed it again today.

Banana aroma and sweetness.
Easy to drink, not heavy with a little acidity and gas.
There is a soft lingering sweetness.
Boiled chicken and shimeji mushrooms with grated radish and ponzu sauce.

I have personally pursued sake with an emphasis on umami, but I now realize how wonderful acidity can be.
