Today's home drinking 🏮 activity❗️Spring Shibori Nama Sake🍶 from Daimon Shuzo, Osaka. It's a nice freshness like a spring breeze even though it's a draft sake. I paired it with firefly squid ajillo (homemade 😉 ), wild amberjack sashimi, and bamboo shoot tempura. Spring 🌸the best marriage of the three 😋👍.
It's freshly brewed at the Daimon Sake Brewery's New Sake Festival in Katano City, Osaka.
Katano City has good water, and the brewer recommended the brewing water very enthusiastically.
The water seems to come from the mountains, which is shocking to me since I grew up on tap water from the Shibashima water purification plant.
A person who had moved from Katano to neighboring Hirakata City happened to be there, and he told me that there was such a difference that the tap water had become very bad since he moved there.
Oh, it would be a pity if the level of water went down from such a good level.
The excellent water makes the Daimon Brewery's sake very soft but firm.
The new sake is also fresh, but it's not too dry, and it's not too light, but it does have a dense flavor.
