Fresh and lively on the nose. Ripe banana, melon attack first, followed by rice flour, acidic yoghurt, fresh cheese, and a grassy, mossy feel.
Soft, clean and unimposing palate, yet gently soothing. Surprisingly nutty retronasal aromas of hazelnut, with clean, cereal flavours on the palate. Interesting astringency lingers past the kire finish.
I like this, very drinkable at just under room temp. 3.75/5

Another one of the beef straw roast sake. This one is a secret sake that is aged for five years.
This is not the kind of sake that goes along with the smoke, but on the contrary, it's the kind of sake that brings out the smokiness of the meat (*Omega*) It's like an old sake that's easy to drink.

Ingredients: Rice (domestic), rice malt (domestic), brewing alcohol
Rice polishing ratio: 35%.
Alcohol content: 17%.
