たけるパパI bought a bottle from Kanazawa-ya Sake Brewery in Niigata Prefecture, which was produced in 2021 and kept in the refrigerator for about 4 years 🍶.
Ingredients are Gohyakumangoku from Niigata Prefecture
Polishing ratio is 60
Alcohol content is 18%.
Sake degree is +5
When the bottle is opened, it has a slight sweet aroma.
When poured into the sake cup, it is smooth and has a slightly yellowish flavor.
After a sip, the taste of lightness spreads quickly, followed by the umami and rich sweetness of Gohyakumangoku, while the acidity from the back of the mouth quickly fades away. Finally, there is a lingering bitterness that makes you want to drink more.
It is a light and refreshing sake, just like Niigata.
It is best enjoyed chilled, but as time passes and the temperature rises after pouring into the sake cup, the mellowness increases.
Personally, I prefer to enjoy it on its own rather than as a food sake 😄. 
たけるパパA bottle that had been sitting in the refrigerator since I bought it in 2021 at the Yukiguni Shuho Kanazawa-ya Sake Brewery.
Finally opened the bottle.
Ishikawa's 🍶, first time for me.
It is a junmai, unfiltered, raw sake brewed by the Naohiko Noguchi Sake Brewery.
The rice used is
100% Gohyakumangoku rice from the Matsudo district of Komatsu City, Ishikawa Prefecture.
Rice polishing ratio is 60
Alcohol content is 18%.
Bottling date: November 2020
Shipping date: September 2021
The following is a summary of my impressions of the aroma and taste, although I cannot deny that they are a bit twisted due to the fact that the bottle was put to sleep.
The aroma when the bottle is opened is a gentle floral aroma.
When poured into the sake cup, it has a smooth, almost transparent, slightly yellowish flavor.
When you take a sip, despite the gentle aroma, it has a distinctly strong attack in the mouth.
A light, gentle sweetness spreads in the mouth along with a smooth umami from the aging process.
The taste is rather light and delicate, and disappears quickly after swallowing.
While the depth of flavor is felt, a light lingering aftertaste is left.
Personally, I like to drink it chilled, but the closer it gets to room temperature, the more pronounced the umami and sweetness become. I think it is better to drink it by itself to enjoy the changes 😁. 

たけるパパIt was purchased at the Yukiguni Shuho Kanazawa-ya Sake Shop and was fire-aged in August 2021. It was a bottle that had been sitting in the refrigerator.
It is brewed with Hachitan-nishiki grown under contract with four farmers in Kakizaki, Joetsu City, and sold year-round.
Polishing ratio is 55%.
Alcohol level is 15 degrees Celsius.
Sake degree is +3 and slightly dry.
Hachitan-Nishiki is a sake rice that has both a rich and crisp flavor. It is said to have an aroma that sometimes reminds one of green grass.
When opened, the aroma is fresh and elegant, with no hint of sweetness.
When poured into the sake cup, it is smooth and has a slightly yellowish flavor.
Taking a sip, it is smooth on the palate, with a light, dry taste spreading through the mouth with a slight sourness, but there is a lingering aftertaste with richness and gorgeousness at the back.
It is a little dry, which is my recent favorite, and it is a good bottle to be served well chilled.

It was put to sleep after purchase.
The alcohol content is 16%.
Polishing ratio is 48% Junmai Daiginjo
When the bottle is opened, the aroma is rich and citrusy, with sweetness and acidity intertwined. The longer it sits, the richer it becomes.
The first sip reveals a complex flavor that is not monotonous, but rather a combination of juicy and dense orizumi (rice curd). A citrus-like acidity spreads in the mouth, and a lingering sweetness lingers in the mouth after swallowing. Delicious.

We purchased this bottle at Yukiguni Shuho Kanazawa-ya during a stocking trip to Niigata Prefecture.
The other bottle with Halloween label will be opened later.
This is the first Halloween label for Takachiyo.

The alcohol content is 16 degrees Celsius.
The aroma when the bottle is opened is sweet and refreshing.
It has a slightly thickened light nigori color.
When you put it in your mouth, the sweetness spreads first.
The sweetness is followed by a sourness that is not too pronounced. The balance of sweetness and sourness is good, and when it goes down the throat, the flavor of Japanese pear spreads in the mouth.
It is delicious with a very refreshing sweet and sour taste.
The alcohol content does not make you aware of its deliciousness.

It was purchased at Yukiguni Shuho Kanazawa-ya in Shiozawa, Minamiuonuma City, along with a Halloween model of Takachiyo.
Takachiyou is a raw, unblended sake with an alcohol content of 18%.
It was produced in 2024.08.
The aroma upon opening the bottle is sweet and fruity. Is it a refreshing aroma reminiscent of pear and muscat aroma?
When one takes a sip, a juicy, rich sweetness spreads in the mouth. The sweetness is quickly lifted by a three-dimensional, discreet acidity, and a lingering alcohol-derived bitterness can be felt along with the sweetness.
Despite its high alcohol content, it is delicious with a sweetness like that of Takachiyo at the forefront.

Bottled in 2024.04 stated Aizan 100%.
Low fermentation with a low rice polishing ratio of 70% and a soft alcohol content of 13%.
Finished with a single heat-refining of the original sake.
The aroma when the bottle is opened is soft and gorgeous.
In the mouth, a faint sweetness and white wine-like aroma spreads.
After that, a lingering acidity with a delicious flavor slowly lingers on the tongue, while the bitterness from the alcohol spreads and gives a sharp aftertaste. The taste is typical of Yukio.
It is a perfect mid-meal sake with a rounded umami flavor that is not preceded by a strong acidity as is the case with nama-shu.

This is the first time I drink "Takachiyo" in hiragana.
The label color is purple🟣 and it is a seasonal product.
I was nervous when I opened the bottle because it was labeled "Active Nama Sake," but I was able to open the screw cap without a hitch.
The aroma when the bottle was opened was sweet, fresh, and fruity. The aroma was sweet, fresh, and fruity, which is a strange way to describe the aroma of grapes.
When you put it in your mouth, the sweetness comes first. A certain gaseous sensation is felt in the mouth, as if mixed with the sweetness. As the gaseous sensation spreads, a sweet and sour acidity can be felt in the mouth.

When the bottle is opened, bubbles like champagne rise to the surface. When poured into a glass, the inside of the glass is filled with a light cloudiness and a fine gaseous sensation, and it really looks like champagne.
The aroma is gentle, with a hint of lychee.
When you take a sip, you will feel a moderate burst of gas, and the juicy fruitiness and sweetness will spread.
After that, the acidity spreads strongly and quickly, and the bitterness of the alcohol slowly follows, refreshingly washing away the acidity and sweetness. Thanks to the bitterness, the aftertaste is clean and crisp.
The alcohol content is 14%. It is low alcohol for my taste.
Can be drunk quickly and cooled down to the perfect temperature.

🌺Toko natsumusume🌺 is a sake with an image of tropical fruits, but if you ask me what exactly it is, I'm not sure. What is it?
What kind of fruit is it? billyIt says "be careful not to spill", but I opened the bottle without any problems.
It was made in March, so it may have been a bit stale, but there was no carbonation at all when I tried it.
