I forgot to mention that I had purchased it at the Yukiguni Shuho Kanazawa-ya Sake Shop.
Bottled in 2024.04 stated Aizan 100%.
Low fermentation with a low rice polishing ratio of 70% and a soft alcohol content of 13%.
Finished with a single heat-refining of the original sake.
The aroma when the bottle is opened is soft and gorgeous.
In the mouth, a faint sweetness and white wine-like aroma spreads.
After that, a lingering acidity with a delicious flavor slowly lingers on the tongue, while the bitterness from the alcohol spreads and gives a sharp aftertaste. The taste is typical of Yukio.
It is a perfect mid-meal sake with a rounded umami flavor that is not preceded by a strong acidity as is the case with nama-shu.
