Although alcoholic beverages are now being served at eating and drinking points, there are still restrictions on the number of people and the time of day, so we can't go out drinking as freely as before. I hope that the Corona disaster will subside soon. In the meantime, we've stocked up on some summer sake for home drinking. This is the "Biroku" series "Summer" special junmai Yamadanishiki 55, first drink of the series, from Otokoyama Honten in Kesennuma, Miyagi Prefecture, who also brewed the Daiginjo sake approved for the morning drama "Welcome Back Monet". The packaging is unique and the bottle has a summer feel to it. The taste is said to be in the process of maturing from new sake, but it has no peculiarities and the umami and acidity are well balanced and easy to drink. If you drink it chilled, you'll drink too much. We are told that the taste of sake changes as time goes by, so we would like to taste it while feeling the summer.

It has a good balance of umami and acidity, and is a refreshing summer sake that tastes great when served chilled. It seems to have no peculiarities, so it is easy to drink with a meal. It is easy to drink, so be careful not to drink too much (laughs). The temperature is rising, so it's the perfect sake for the coming season. I'd like to find other summer sakes to drink as well.

This is the second bottle that I stocked for Golden Week. Because the rice is polished to 80%, the flavor is subdued and the finish is refreshingly dry. It can be enjoyed chilled, at room temperature, or even heated. It has a nice mouthfeel, so I thought it would be good to enjoy as a sake during meals. It's time to get back to work, so I need to start the engine. The state of emergency has been extended, so we'll continue to drink alcohol at home for a while. I hope to be able to enjoy it with side dishes that go well with alcohol. By the way, the name of the sake is kind of like the blade of demise, and I was eyeing it when I saw the list thinking it was cool (laughs).

Due to the effects of the corona disaster, restaurants will no longer be serving alcoholic beverages. I've been trying to protect myself by avoiding eating out with people other than my family, but it's no use. So I went to Nitto Shokuhin to buy some sake to drink at home. First up was the first bottle. It's from a sake brewery in the Kujukuri area of Chiba. It has a medium mouthfeel, with a good amount of umami and acidity. It is said that the sake is made to look like an airplane taking off from Narita Airport, which can be seen near the sake brewery. Although it is a Junmai Ginjo, the cost performance is good and we enjoyed it.

It is a "muddled sake" made with local rice and yeast collected on the premises. I bought it raw because it is a very limited edition. As it was still fermenting, I opened it slowly and chilled it as per the instructions on opening the bottle. I enjoyed the taste of the traditional sake while feeling the mumble of the rice. I thought it would be sweeter, but there was hardly any sweetness at all, and it was an interesting sake where you could feel the flavor of the rice. The label is unique and you can feel the story of the brewery.
