Special Junmai A Urakasumi, a sake brewed in Shiogama, has a counterpart, "Un", but we were unable to obtain it. Too bad. First of all, note the cool label. It was created by Emi Ichinoseki, an ink painting artist based in Sendai. The motif of this ink painting is a ship named "Ryuhomaru," which appears in the Shiogama Minato Festival. As someone with a connection to Shiogama, this sake is a delight to drink. It is the usual Abe-kan, which is not glamorous, and even rugged. It has no habits, but if you ask me if it is easy to drink, I can't answer that it is. It is a full-bodied type of sake with umami as its main flavor, but its assertiveness is very modest. The sweetness and acidity are moderate. The aroma and sharpness are not that great either. And yet, it is so delicious that there is no other way to pair it with tuna but with Abe-kan. The characteristics of this sake are that it is very smooth. The impression one gets when drinking it is very similar to the texture of Morozoff-type steamed pudding. Why is that? You really don't know what I am talking about, but it has that texture of steamed pudding, or rather, of a very soft chawanmushi. If you think I'm lying, or even if you think I'm telling the truth, I urge you to give it a try.
