Today, my eldest son came back from Kanagawa, and he stopped by 4 sake breweries and bought me some sake 🍶... First of all, this one 💁 was completely unmarked... I didn't know the brand or the brewery... The label looks stylish, 60% polished rice, what rice is it? It has a classical mouthfeel. I think it is better to drink it as it is than to drink it with a meal (⭕️). I wonder if there are various local sakes in Kanagawa...

Mizo Village prospered as a center for the distribution of cocoons. It was named "MIZO" in memory of the old days.
Opened March 18, 2024
Purchased at the brewery
Surprisingly gentle!
Mild sweetness, raw bitterness and fresh acidity❗️ bitterness and acidity are quite restrained and favorable ^ ^.
Overall, it is restrained and mild, so it can be drunk on many occasions ^ ^ ^.
Shimizu Sake Brewery visited on a Kanagawa Prefecture sake brewery tour.
If it is the oldest sake brewery in Kanagawa Prefecture, we had to visit it! So we decided to visit ☺️
The brewing of this year's sake seemed to have been finished early, and the brewery was very quiet. The wife of the brewer kindly greeted us. The brewery produces only a few bottles of sake, and most of it is consumed within the prefecture, so it is not often seen in sake stores.
She told us that they value traditional sake brewing, but since we are Junmai people, we bought a Junmai Ginjo.
Drinking it cold, it tasted of grain and rich rice; warming it up to 40 degrees gave it a fuller, rounder flavor 🍶✨.
From the waiter
I recommend the dry sake!
We have some freshly squeezed sake available now.
I got it without hesitation.
The dry sake is Miyamanishiki. The rice polishing ratio is 60%.
It is a ginjo-shu with an alcohol content of less than 16 degrees Celsius.
It is indeed dry when you take a sip,
But is it easy to drink? From the first sip
It is a bit dry, but it is easy to drink,
It spreads to the side of the mouth, and a light bitterness also comes in.
I knew the dry taste would come. It's like a dry sake.
After the next day, it spreads to the side of the mouth,
The bitterness subsides and drunkenness sets in.
Then it matures,
It is like a wine that has been aged for a long time.
As the days go by, it becomes easier to drink,
It is easy to drink as the days go by, and the feeling of having been laid down comes out.
