It is a very light, somewhat spicy, unpasteurized sake that can be enjoyed with a wide range of dishes.
It is dry with a moderate sweetness, and the flavor broadens slightly when heated.

Tottori is my favorite place for both the region and the sake!

Iwai Onsen in the neighborhood is the best, but this place is great too!
Also, the izakaya is really good and inexpensive!
Tottori is known for its Tobiuo, but I prefer Babaa!
However, what goes best with sake is probably the rare and delicious tuna, the queen of nameurou, as Mr. Ota says!

I got this because there was some kind of free shipping in March for Tochigi sake (;-).
I personally particularly liked Juichi-Masamune at a Tochigi sake tasting, but it was not sold at all, and I was finally able to buy it!
This one is a Tsukii Sake Shop original, and while the basic sake is mainly +/- zero sake, this one is dry!
However, it has a firm sweetness, and the dry taste and sharpness are the basis of the dry taste.
Softness typical of soft water.
When heated up, the richness of the wine expands considerably, and this is the best warmed draft sake!
I wanted to buy a hi-ire junmai, but I'm glad I got this one!

This sake is made from carefully selected rice grown in Yaita City and brewed with natural ginkgo yeast purely cultivated from cherry blossoms.
When you try it, you'll find that it's mild for an undiluted sake, with no residual sweetness.
