Sake tasting set from Shodoshima Sake Brewery, the only sake brewery on Shodoshima.
The store was stylish, with a varied lineup, as if it were a newly rebuilt brewery.
As one would expect from Shodoshima, there were four olive yeast sake tasting patterns. They all have a slight greenish tint to them, but olive has nothing to do with it.
My favorite was the Junmai Ginjo "NAGARE".

This is the first time I tasted it. I have not drunk from this square, but it tastes like sawdust. Tastes like a wood yard. Dried rosemary? If I were to pair this with a smoked cheese, it would be a smoked cheese. Hurdling, I learned a lot.

The "Fufufu. Ginjo-shu".
This ginjo-shu is made from 60% Senbon-Nishiki produced in Hiroshima Prefecture and carefully brewed by hand in the traditional way by the only small sake brewery in Shodoshima, using water from Shodoshima!
The label with the cute name "Fufufu. The label with the cute name "Fufufu" represents the sunlight filtering through the trees of Shodoshima's Kankakei Gorge.
The aroma of this gorgeous ginjo-shu is reminiscent of flowers and blue fruits.
The light, fruity sweetness starts with the umami of the rice and finishes with a clean, sharp finish.
â™" The refreshing acidity and clean sake quality make it a sake that goes well with a glass of wine.
