Kukura Yamadanishiki Junmai Daiginjo
The aroma is sweet, refreshing, full-bodied, and delicious.
Kukura Omachi Junmai Daiginjo
Compared to Yamadanishiki, it has more sweetness and bitterness, with a strong Omachi-like flavor. This one was said to be fast brewing.
Kukura Aizan Junmai Daiginjo
The Aizan was the most promising, but the umami was weak and light, a little too elegant.
Nanatsubai Namaishige Junmai Nama Shu Aizan
The aroma is sweet and refreshing, but it is full-bodied and delicious.
Hamafukutsuru Yuzu Biyori
It is so good, it is said to be the equivalent of 12 yuzu citrons.
I went there for the second time and was told that it was not, but the website still says it is made using the original yeast.

It has an elegant taste of apple and some herb/plant. Although it is sweet from entering the mouth to after swallowing, it is not plain with some interesting complexity.
The rich sweetness and umami taste will overwhelm you at first, but the clear aftertaste creates an exquisite balance. This is a gem that is not only universally high in quality, but also has a sense of confidence without losing its individuality.
