Wakatake Junmai Daiginjo
The last 20 bottles of this sake are said to be a phantom sake, as the rice variety is changing.
Paired with stewed shiitake mushrooms and hon wasabi, it was the most delicious. It had been a long time since I had had a sake that impressed me.
It is dry at a sake strength of +8, but it has a slight sweetness and umami taste at first, which soon became refreshing and clean. It was a delicious sake to drink chilled in summer.
