Today I drove with my father to Moriya Sake Brewery in Kujukuri to buy doburoku.
The weather was beautiful and we had a nice drive.

They also made an original label as a gift for Mr. Ham who is visiting from Taiwan on a business trip 🤗.
It was more fermented and schwarzier than last year's 🤗I want to go back to buy some more 🤗‼️

I have recently discovered that Chiba sake is delicious, and this one is great!
It has a smooth alcohol taste with a clean aftertaste, and the mouth opening is even easier to drink with some gasiness.
The alcohol is a bit high, so it gets to you quickly...

I had been looking forward to daiginjo doburoku since January and went to Kujukuri when I got a call from Moriya Sake Brewery that it was ready. I was so excited and went to Kujukuri.
First, I had the supernatant first, then the cloudy doburoku 🍶🍶 after mixing it.
The taste is gentle and somewhat dry, leaving an astringent taste in the back of the throat.
It also has a nice lactic acid beverage flavor.
If you are looking for a sake-like taste, it might be the Junmai Ginjo in the fourth picture.

I went to Moriya Shuzo in Kujukuri and bought some doburoku.
After leaving it in the refrigerator for a few days, I first tried the top part of the doburoku, and then slowly mixed it with the original doburoku. At the end of the drink, there is still a lot of unrefined sake left in the bottle, so chewing on it as you drink is also delicious!
I'm not sure what to make of this, but I'm sure it's a good idea.

Strawberry Bitter Chocolate!
It's not an exaggerated expression, it really is.
The sweetness and sourness are wrapped in the bitterness immediately after that, and it remains in the tongue slightly. Then, it changes to a spicy taste and goes away quickly.
It is a matured sake made by letting the company's Hyakunen no Shizuku sake sit for two years, so it has a rich and full flavor.
And the alcohol is 19 degrees! It's a new genre of sake.

This dry junmai has a sweet and sour taste on the palate, but because it is aged as an original sake, it has a solid umami taste along with a bitterness that quickly fades away. It is a good sake to drink cold. The overall impression is of richness and bitterness, and it has the atmosphere of old-fashioned sake, which is different from those in fashion today. Moreover, it is a unique sake because it has a high alcohol content of 17 degrees, which is different from the beautiful name of Maizakura.
It is my favorite sake, because I like thick sake!
