I went to visit the brewery of Ozawa Sake Brewery in Ome, Tokyo.
The brewery is a historical building that is over 300 years old.
It was a theme park with a café, a kaiseki restaurant, an art museum, and many other attractions.
It was a warm day, and we were able to enjoy a relaxing sake tasting while viewing the mountain stream and the scenery.
We tasted three kinds of sake: Junmai Honjishu, Tokubetsu Junmai Sawanoi, and Daiginjo Sawanoi.
It was like sake tasting on the high street.
After the sake brewery tour, we had Soten and Shin Shibori.
This one was fresh.
I had a variety of sake, but I checked in with Soten, which was my favorite.
I would like to go back when the leaves change color.

It has a definite umami flavor and a tangy feeling on the tongue. A little strong alcoholic flavor. I prefer it at room temperature rather than chilled.
P.S. This wine is better at room temperature.

Souzake. Well-balanced sweetness and sourness, refreshing and easy to drink. It is the best match with oboro (dried tofu)! I think it is easier to drink with something light than with something rich.
