I had one cup of this sake on a trolley train in Chiba. I didn't know much about Chiba's sake, but this sake has a subtle sweetness and a slight sourness, but while robust, it is easy to drink without any peculiarities.
Seisen has a traditional flavor when it is fire-aged...but the raw sake is delicious 🍶...sweet rice aroma...sweet and bitter on the palate, but not bitter enough to be bothersome. Jungin sake brewed with 100% Chiba's sake brewing rice "So no Mai"... I am enjoying it with "Vinegared Myouga" and "Salted Marlin" from Chiba... a delicious marriage...
It is a delicacy from Minami-Boso...perfect for sipping on...but since it is made from only the guts, liver, and salt of the marlin, the salt content...personally, it is the best snack...
