I bought a bottle of sake because it seems to be rare in Kansai. I didn't know about this sake brewery at all.
The rice used is Fusakogane and So no Mai. There is a little gas feeling. While feeling a little sweetness, it has a firm umami and a gentle spiciness. It is an interesting type of taste that is not common.
It is a fishing expedition to Tateyama today. I bought it at a souvenir shop in the street. The fishing did not go well, but I bought it with boiled sea bream. The feeling of rice is quite strong. The sourness and sweetness are moderate and relieving. This kind of rice is the most comfortable. It doesn't have a strong fruitiness, but it does have a banana feel when it gets to room temperature. Let's warm it up a bit!
I also went fishing at Tomiura Aihama Port today, and I've been enjoying sashimi of saki and kintoki snapper. I recommend the Fujihira Sake Brewery in Chiba Kimitsu "Fuku Shukyu".

Seisen Junmai Ginjo Unfiltered Raw Sake
16% 60% Fusakogane So no Mai
This is Seisen from Wazo Shuzo, the brewer of that beautiful sake (that only I'm recommending), "Kyonancho". I bought this raw sake directly from the brewery.
I opened the bottle at home and took a sip.
It has a gassy feel. It is accentuated by a good miscellaneous taste of the local rice, and the fresh acidity brings it together. It is hard to compare it to some kind of fruit, but it is juicy. I think it is very tasty.
The president here is very polite. He came to see me off when I got into the car after purchasing the product. I was about to set the car navigation system to the next destination, but he kept bowing at the gate, so I had to get out and start the car.
Such a serious taste is put into this sake.
If you're ever in Chiba, be sure to try both Seisen and Sawan-cho's nama-shu.

The slight acidity dances on the tongue. The sensation is reminiscent of delicate bubbles that might be mistaken for carbonation. It has a strong aroma of rice and koji, but it doesn't leave any aftertaste. Combined with the acidity, it feels sweet and disappears in a flash.
