Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

Worked until 10pm (interim closing), had a glass of Chiyozono Shuubai (Junmai-shu) opened 4 days ago, served with ham loin. It seems to be spicier than 4 days ago. It has a gentle hint of aroma and a nice lingering aftertaste. It reminded me of the Shuubai sake I had 40 years ago. I feel that this brewery has the same "core spirit" even if the owner and toji have changed. It never blurs 😊.

While living in Fukuoka, I visited the brewery with an acquaintance. We bought a limited edition sake from the brewery. The brewery also had a corner shop 🍶. If you go to Yamaga for sightseeing or a hot spring trip, please visit 🙌! Cold sake Aroma: melon-like freshness with a hint of juicy melon Moderate volume. Gentle sweetness with a smooth finish.

We visited the Chiyonen Sake Brewery in Yamaga City, Kumamoto Prefecture, which has started a corner bar. It looks like a wine bottle, sealed with a cork. It seems that they wanted to keep the bottle corked and aged, and the only way to seal it with a cork was with a wine bottle, so they sell it in a wine bottle. It was very plump and tasty when I let it air out a bit.

At Hanatomitei, a ryokan in Yamaga, Kumamoto Prefecture. Kumamoto sake is not often available in Tokyo. The label is already very unusual 👀. It is made from 100% Hananishiki, Kumamoto Prefecture's first original sake rice. The yeast used is Kumamoto yeast, and all the ingredients are made in Kumamoto Prefecture. It has a clean taste with a strong umami and richness. The airplane label is the president's special touch.
