The aroma has a powerful acidity and a hint of sweetness. It has a firmness reminiscent of sake yeast yeast yeast and Yamahai yeast yeast yeast.
In the mouth, there is suddenly complex acidity, umami, sweetness, and bitterness. From there, the umami comes in full force. The sweetness and bitterness also open up, and the aftertaste lingers slowly.
I expected the lingering aftertaste to be deep because of its robust flavor, but it disappeared quickly. I like the way it feels after drinking. Interesting!
If I were to use a Ghibli analogy, it would be Dora from "Castle in the Sky. It's strong but actually gentle, and the aftertaste is really nice and appealing.
