Wow, this is impressive 😀. The shwashiness is still there even after 8 years. The sweetness and acidity overflows, and the bitterness characteristic of Mie Nishiki's light cloudy taste creates a lingering aftertaste. Mie Nishiki makes you feel the bitterness is delicious.
Oh, this, this, I used to love Mie Nishiki. The flow of time gives the taste a mellowness, and it has both freshness and maturity, two contradictory elements. It is delicious, deeply delicious.
It was the night I vowed to drink this one again, little by little, over the course of a year.
It has a yellowish appearance and a sweet, mellow, melon-like aroma.
The taste is not sweet, contrary to the aroma, and the umami flavor comes first, followed by a long-lasting strong flavor that can be described as a matured or aged aroma.
