three cups of Tsunite (three cups of sake) Rice used is Hachitan Nishiki Sanshiki has a punch, doesn't it? It has a good sense of maturity and a pungent spiciness. It also has a nice sharp aftertaste. ❗️ It's great to have this kind of sake in the lineup! It was delicious. ❣️

The third drink at my favorite yakitori restaurant was Uramie Nishiki. This was also my first sake. I don't often drink dry sake, but this one was labeled "super-harsh," but the mouthfeel was very mild and delicious. It has a soft bitterness in the aftertaste, so I could also taste the dryness.

Light Nigori Junmai Unfiltered Nama Sake I don't know if they have stopped making it or are temporarily suspending production, but it was definitely delicious. The sweetness of the rice was supported by the acidity, and it was like that. I hope they bring it back.

Sourness spreads, plus umami. Not much sweetness, clean taste. It has a nice sharpness. Although it is called "super-hot," it is easy to drink without being spicy.

The rice used is Yuyamanishiki. This is a great hard puncher. ‼️ From the first sip, I was dizzy. I've always loved Mie Nishiki, but it's hard to rate this one. It has a sense of maturity, but the acidity is unique. My partner says it's "like the inside of your mouth on a hungover morning". I don't know if this is the original flavor or the result of aging, but depending on how you drink it, you can certainly feel the sourness. This kind of flavor is difficult to get used to if you are not accustomed to drinking it, but it is an interesting sake that seems to change a lot as time goes by.

1658 2022/8 Mie Nishiki Junmai Ginjo Nakadori Nama Nama Undrafted H27BY 60% Mie yeast MK-1 16° 21/10 A Nakai Nihei Sake Brewery, Iga City, Mie 1800 3390 I was a little prepared for this sake, as it was a raw sake that had been aged for six years in the brewery, but it was unexpectedly beautiful. The aroma is soft and reserved without a hint of maturity, and it has a slightly sweet, elegant junmai ginjo-style flavor that has lost some of its edge after more than one summer. The acidity is also moderate, leaving a moderate bitterness in the aftertaste. Even when heated, the impression remains the same: a gentle sake. I would have liked a little more acidity and richness, but it is not light, and the flavor gradually broadens after opening the mouth.
