The rice used is Yuyamanishiki. This is a great hard puncher. ‼️ From the first sip, I was dizzy. I've always loved Mie Nishiki, but it's hard to rate this one. It has a sense of maturity, but the acidity is unique. My partner says it's "like the inside of your mouth on a hungover morning". I don't know if this is the original flavor or the result of aging, but depending on how you drink it, you can certainly feel the sourness. This kind of flavor is difficult to get used to if you are not accustomed to drinking it, but it is an interesting sake that seems to change a lot as time goes by.
