Chidori Masamune is a sake that is rarely available in Hyogo unless you go to the brewery.
The head brewer of the brewery was there.
The previous and current brewer are both graduates of Tokyo University of Agriculture, so they also produce red rice sake.
The rice is also grown in the company's own terroir.
The sake is pressed by the Yaegaki method, not the Yabuta method.
We drank
Mita Ichi Junmai Namaishu
I thought it would be a classic type, but it had a nice aroma and was quite sweet. It was sweeter than the Mita Shibori I drank before and I liked it.
Mita Mita Fukuda Junmai Daiginjo
It has a classical taste with a strong graininess. It is not like a daiginjo and is not very subtle...
