This brewery is located in Fukui City, Fukui Prefecture.
Sake rice is Gohyakumangoku and Shinriki rice.
It has a fruity ginjo aroma,

It may be a little insufficient.
It would go well with light fish dishes.

Gentle and soft ginjo aroma, rounded mouthfeel, well-balanced sweetness and acidity, and a pleasantly bitter taste that finishes gently. A well-balanced sake that is beautiful and goes well with meals.
It is made from a revived sake rice called "Jinriki" and is freshly squeezed from the tank and then unfiltered, so the color is quite yellow and there are still some residues. This is the first time I've had sake rice called Jinriki!
The aroma is sour and woody, though mild.
The taste is clean and crisp, with no cloying flavors. It is easy to drink and well balanced, so it is good as a food sake ✨.
