Morohashi Shuzo, the brewer of Echino Kagetora, was established in 1847 and has been brewing sake in Nagaoka City (formerly Tochio City), Niigata Prefecture, for about 160 years. The sake name "Echino Katora" comes from the name of a famous Echigo warlord, Uesugi Kenshin, who spent his youth in Tochio and took the name "Nagao Katora" at that time. Echino Katora is brewed using water from the Morinomori Spring, selected as one of the 100 best waters in Japan, and water from a side well dug on the brewery's property. Koshino Kagera is characterized by its dry taste.
