こるね＜It's very sweet, fresh, clean, and lightly nigorized.
The color is a beautiful clear light nigori.
The aroma is of rice sweetness, alcohol, and a refreshing rum mint that comes through quickly and pleasantly. I want to keep smelling it forever.
In the mouth, it's suddenly sweet and sizzling!
YUM!!!!
It has a clean sourness, a fresh bitterness, and a mild but firm flavor. Then, a hint of alcohol comes out of the nose.
In the aftertaste, the bitterness is soft and gentle.
The side dish was cheese marinated in miso. This is a standard dish that we often make at home, but that's why it's fun to eat it in different places. The miso paste is modest and elegant. And it's even more awesome with wasabi! And it goes perfectly with alcohol! This was a good tip for me.
If I were to compare it to Ghibli, it would be Hiromi from "The Cat Returns". She is the friend of the main character, Haru, who appears at the beginning of the movie. She is a fresh girl in love. By the way, I prefer girls with short cuts, so just having a short cut increases the cuteness by 30%.

This is a heated sake from Jyoshinin Jiheiji.
When tasted cold (at room temperature), it is a little bitter! Yeah. It's totally different from the usual Kuheiji!
Now for the real thing. I'll start with hot sake (50°C).
The aroma is spicy alu-woo!
In the mouth, it's crisp and dry. The bitterness of the cold version is gone, and the flavor is crisp. It seems to be sharp, but the aftertaste is gentle. The sweetness is very slight and almost imperceptible.
At around 40 degrees Celsius (lukewarm), it has a faint sweetness and acidity, and the bitterness that comes out at around 35 degrees Celsius (warm) is also present. The bitterness that comes out at around 35°C (35°F) is also present. But I liked it at around 45°C (45°F) to 50°C (50°F).
The dryness was still completely different from the usual Jiheiji-san. But the cleanliness is the same.
If I were to use a Ghibli analogy, it would be Kushana from "Nausicaa of the Valley of the Wind. She is another heroine who is the counterpart of Nausicaa, but she is not sweet at all, she has a strong will power.

こるね＜Sweet and mellow, with a hint of fragrance, and a hint of bitterness.
It's been a while since I've seen you, Mr. Ro-Man. I've been drinking Hanazumi-san from the same brewery, but this is the first time I've reviewed Roman-san since I started writing reviews.
This one seems to be a PB of Suzuden, a local sake specialty store in Yotsuya, Tokyo.
The aroma is umami and slightly sweet.
The mouthfeel is mellow and sweet-sour-honomi. It is full of sugar. The umami aroma is very pleasant. In the latter half, the sweetness spreads further, and the umami bitterness is also strong. YUMMY!
The sweetness, umami, sourness and bitterness are not sharp, but when they are combined, they leave a strong impression. Hoho-uma!
If you compare it to Ghibli, it's the scene of "I like Kumori" in "Omohide Poroporo". It's so sweet, but at the time I didn't know what to name the feeling. But it remains in my memory.

こるね＜It's tangy, it's thick, it's refreshing, it's dark, it's nigori.
This doburoku is made by Heiwa Shuzo, which is famous for its Kido. As it says "prototype", it is a trial product that was challenged this season, and only 5,000 bottles will be sold.
The color is thick and pure white. When you hold the glass, you can't help but feel the weight of it is different from ordinary sake.
The aroma is full of lactic acidity and umami! Oh, this looks thick.
On the palate, there's a lively carbonation and a solid texture. There's a lot of the rice shape left. And it has a rich sweet and savory taste with a focus on sourness. However, the aftertaste is refreshing because the sourness erases it nicely. The sourness has a roughness that even feels wild, but it has a gentle depth.
If I compare it with Ghibli, it is Moro of "Princess Mononoke". It is a god of the Yamainu with beautiful pure white fur. He seems to be hostile to humans, but originally he was worshipped by humans and was with them. So it's not that he hates humans. And he lives in an ancient shrine made by humans. And his love for San is deep.

Senkin雪だるま しぼりたて 活性にごり酒 生純米生酒にごり酒 
こるね＜Sour, sweet, ponk! A fun, sweet, nigorizake.
This is a very popular nigorizake, Senkou's Snowman. I think you could say it's the most popular nigorizake of this time of year.
I was able to drink the last of it just before it ran out. But it's hard to read the words on the back of this bottle when it's not filled.
The color is a beautiful white with plenty of lees.
The aroma is of lactic acid sweet sake alcohol. There's no doubt about it.
The mouthfeel is sour-sweet-ponk! YUMMY!!!!
It has a refreshing sourness from the lactic acid and a rich sweetness from the rice. I can feel the sweetness more clearly than I remember drinking it before. Then, from the back, there is a pleasant bitter taste. It flies away as an aroma, and the acidity cuts through the aftertaste nicely. An enjoyable sweet nigorizake!
If you compare it to Ghibli, it's like the Totoro snowman in the ending of "My Neighbor Totoro". You can feel how much fun it must have been to make it. The expression on Totoro's face when he sees it is also interesting.

こるね＜It's full of delicious acid. It's a big explosion when paired with an appetizer.
The color is slightly yellow.
The aroma, what is this? The smell of cheese, the mysterious sweetness, and the umami. I've never had anything like this before!
When you put it in your mouth, the flavor and sourness suddenly go bang! From there, the umami spreads further and the sourness doesn't retreat one step. The sweetness is also strong, but its presence is faint in front of this umami.
Even after you swallow it, the umami spreads with a further push. It is really peculiar.
I'm sorry, but I'm going to be honest. I wasn't expecting the taste of this sake. To be honest, I don't really like sake with a high amino acid content. But my curiosity got the better of me and I ordered it.
And yet, it's delicious! Even though it's really peculiar!
If I were to compare it to Ghibli, I'd say it's like Osira from "Spirited Away".
It's obviously not human. I've never seen her before. But he is surprisingly a good person. Oh, he's not a person but a god. It's so cute that he's doing the banzai at the ending.

Tenbi新酒 純米吟醸 にごり生純米吟醸生酒にごり酒 
こるね＜It's petite, soft, sweet and sour, and full of flavor.
The aroma is of sweet sake with a hint of sweetness. But it also has a refreshing acidity. There is no doubt about it. This is absolutely delicious!
When you put it in your mouth, it has a gentle petite fizz. Then, the sweetness of banana and apple and the lactic acidity are soft. Then, the flavor of the rice wafts in. The modest bitterness in the back is also attractive. It's not that any of them are particularly assertive, but they are harmonious and very impressive. The return fragrance that spreads in the mouth and passes through the nose is also happy.
Mmmmm!
If you compare it to Ghibli, it's like Umi-chan from "From Up on Poppy Hill". The main character is cute and strong. Her youth is petite and sweet. In the back of her mind, she also has the bitterness of not having a father. And the sweetness of love. It's a refreshing love that's not too sweet.
