This doburoku is made by Heiwa Shuzo, which is famous for its Kido. As it says "prototype", it is a trial product that was challenged this season, and only 5,000 bottles will be sold.
The color is thick and pure white. When you hold the glass, you can't help but feel the weight of it is different from ordinary sake.
The aroma is full of lactic acidity and umami! Oh, this looks thick.
On the palate, there's a lively carbonation and a solid texture. There's a lot of the rice shape left. And it has a rich sweet and savory taste with a focus on sourness. However, the aftertaste is refreshing because the sourness erases it nicely. The sourness has a roughness that even feels wild, but it has a gentle depth.
If I compare it with Ghibli, it is Moro of "Princess Mononoke". It is a god of the Yamainu with beautiful pure white fur. He seems to be hostile to humans, but originally he was worshipped by humans and was with them. So it's not that he hates humans. And he lives in an ancient shrine made by humans. And his love for San is deep.
