Yonemune is made by Aoki Shuzo in Aisai City, Aichi Prefecture. The 21.9 on the label is the alcohol content 😆. No yeast added, acidity of 2.9, and a sake degree of +25, which is a doozy 😤. The owner of a yakitori restaurant I went to later in the day, which mainly serves hot sake, told me that the alcohol content is only possible because of Yonemune's brewer's yeast, not an association yeast. I had it cold 🍶. The first aroma has a slight acidity. In the mouth, you can taste the acidity and sweetness accompanied by umami. It may be because I usually drink high alcohol content nama sake, but the umami is so thick that you don't feel the 21.5% alcohol content. I could taste a glimpse of the umami in the cold sake, but I definitely think this sake should be heated up. I made a mistake 😌. The third and fourth pictures are of Yonemune's brewery, about a 10-minute cab ride from Kintetsu Yatomi Station on the Kintetsu Nagoya Line (or Yatomi Station on the JR Kansai Main Line). While I was taking pictures, Toji Aoki, who was working on the brewery, happened to come outside and I was able to talk with him, if only to say hello 😊.

This sake is from the family home of Sony's Mr. Morita. I did not visit the brewery because it is located at the end of the Chita Peninsula and is very far from the nearest station. It is a regular sake with no added alcohol, sugar, or acidifiers. The aroma on the nose...not so much. It has a slightly twisted taste in the mouth and a sweetness that says it is a normal sake. When did I open this 🤔? It wasn't very tasty 😅.

This is an autumn sake of Koromoura Wakamizu from the same Harada Sake Brewery as the previous post, Ikumichii. Like Katsurin in the two previous posts, this sake uses Wakamizu as the sake rice, and I found out that Wakamizu is a sake rice improved in Aichi🌾. The initial aroma is mildly sweet. The top aroma is mildly sweet, and the palate is slightly dry with a moderate sweetness followed by an umami taste that is typical of autumn sake. It was quite delicious 🍶. The third picture is not Tsutenkaku Tower but the Nagoya TV Tower in Sakae 🗼.

I did not visit the brewery, but this is my first visit to Ikujii, Harada Shuzo, located in Higashiura-cho, Aichi Prefecture. I had never heard of this brewery. It is a honjozo sake🍶. The aroma on the nose is mildly sweet. It is a bit peculiar on the palate, but has a sweet taste like a good regular sake. It was delicious ✨ The third and fourth pictures are the stone monument at the site of the Okehazama ancient battlefield and the grave of Yoshimoto Imagawa (apparently there was originally a mound there), located just outside Chukyo-Kyoban-mae Station on the Meitetsu Nagoya Line.

Katsurin is a sake made by Yamazaki Goshi Company, famous for "Oku". As the name suggests, it is a sake that goes well with fish dishes. I did not visit the brewery, but this is my first time. The first aroma is mild and sweet. It is slightly dry with a hint of umami and sweetness on the palate. I enjoyed it with shrimp tempura 🍤✨. The third and fourth pictures show the second torii gate of Atsuta Shrine and the barrels of sake.

This is Bishu Kotobuki's brewer's yeast sake from Asuigen, Fushimi's Tempura and Sake (🍶) The top aroma is slightly sweet. The palate has a full-bodied sweetness with a hint of caramelization. It is much more mature than the last time I drank it. It was delicious ✨. The third one is Fujiichi Shuzo's brewery, located about a 10-minute walk from Kokubumiya Station on the Meitetsu Nagoya Main Line. It was located near the remains of the main camp at Inaba-juku on the Mino Road, which connects the Tokaido and Nakasendo highways. I learned about the history of Kikutaka and Bishu Kotobuki at a liquor store in Fujiichi's neighborhood, which I cannot write about in detail, and I found out that the store carries Raku no Se's Dera Nigori, so I made arrangements to order some 😊.

明日源にて。甘い香り。三千盛らしくスッキリ辛口系。

2/21すい峰にて再飲。さらりと柔らかく甘みも感じる軽快な口当たり。ほどよい辛味を伴ってキレる。

We drank it again at 10/3 at Kirei. It has a refreshing taste. It has a faint taste and a sharp crispness that is typical of Sanzenmori.
