The color is a faint golden hue, and the aroma is clear and typical of sake. In the mouth, the fruity ginjo aroma spreads softly, followed by a natural and refreshing rice sweetness and umami. The subtle gasiness combined with the freshness of the sake flavor gives the impression of a modern sake with a very good balance. It has the presence of a dexterous protagonist, and can be enjoyed both as a mealtime sake and as a stand-alone sake. Luckily, I had a glass right after opening the package. In addition to a definite gaseous and raw sake taste, the ginjo aroma, which is not overdone, forms an exquisite unity. I am convinced that this sake is highly praised by the public, and at the same time, I personally consider it to be the best in the category of "sake with a natural fizzy taste. Perhaps this is the result of the hard water of Nara and the fermentation power of the No. 7 yeast.

The impression is of a modern sake with a gorgeous aroma. It has a definite presence, but is not overly assertive. The ginjo aroma is similar to Koda, which I personally prefer, and I wonder what the C/E ratio is like. This time it was a junmai ginjo, but I am curious to see how gorgeous it would be in a daiginjo or junmai daiginjo.

The impression is of a very juicy, modern sake with a gorgeous aroma. The sense of nama-zake is well balanced. It has the presence of a leading role. Very tasty and I would like to drink it again and experience another Houou Mita. Before I got into sake, I drank Hououmida casually at a friend's house, but this drink made me realize that I should have appreciated it more.

Mukaze Junmai-shu Betsugaku Sake degree +2 Acidity 1.3 Amino acidity 1.2 I've been curious about this sake for a long time, but I've never had it, so I gave it a try! Sake from Gifu Prefecture*. The rice is Hidahomare. The rising aroma is not so strong. The sweetness of the rice is slight, and there is also a bit of minerality, so the overall impression is dry. I thought it would be a rough sake because it's a Mukade, but I thought it would be a bottle with a changeable taste, with sweetness coming in and out*. Anyway, the label is toxic*, but it's cool*.
