Kamimaru Junmai Ginjo 55, once fired First day of opening the bottle It has a rich sweet taste with the sweetness of rice right out of the bottle. However, the acidity also comes out and tightens it up, so there is no sticky feeling. When cooled down, the sake is clear and easy to drink. Second day after opening the bottle The ginjo aroma and spiciness have emerged. The sweetness of yesterday's sake is offset by the spiciness of yesterday's sake, creating a perfect balance. This is delicious!

Opened 5 days The aroma is unique... cemedine + honey + cotton candy-like... The sticky sweetness of the first day of opening the bottle is softened and a pleasant acidity develops. Still... there is no doubt that this sake is quite thick and sweet.

Opened 5 days The gas and brewer's alcohol feeling has left the bottle. Cemedine rises gently. Taste washes over the palate. Is it the survivor of the brew alcohol that lingers in the back of the tongue? Either way Either way, this taste is a foul one for a honjozo sake. A delicious sake from the first day to the last.

Cork opened 7 days Gentle aroma → clear sweetness → slight bitterness + a little sourness Aroma...pomegranate? Cherry? The aroma is not assertive. Sweetness...Aquarius Zero level (not like rice sweetness) Bitter acidity in the aftertaste tightens it up, and there is a surprisingly long aftertaste. I wonder if this year's Tobiroki is more of a food sake. I take my hat off to the sake brewers who keep the flavor as it was on the first day even after 7 days of opening the bottle!

First day of opening the bottle Not as sweet as expected Moderately sharp and pungent The aroma is mild. Second day after opening the bottle A little pineapple in the aroma. Sweet and pungent at the same time, so it's easy to drink. Slight bitterness also appears. 3rd day after opening the bottle The aroma has clearly opened up! At the same time, the pungency is almost gone and it has become rounder. Instead of the pungency, the acidity is enhanced and suppressed by the bitterness. It is a perfect balance 🥹. 4th day after opening the bottle The sweet and delicious taste is the same as yesterday's impression 🆙. Hanamup has an excellent use of acidity hidden behind the aroma. It's sweet, but it's easy to drink. 5th day after opening the bottle It has a good balance of pineapple and bitterness. Just when you think it's sweet, the bitterness tightens it up! It was so good that I finished it in 5 days. It was a repeat sake for sure~! Thanks for the treat.
