Compared to the 4BY, the 5BY is still a draft sake, but I get the impression that it has been corrected. We can expect to see more fire-aged sake as well.
The 4BY Dragonfly Hiyayogoshi had a light bitterness, melon-like aroma, acidity, bitterness, and dryness...the quality of the sake was typical of Wakanami.
100th anniversary sake. It was felt to be a typical Wakanami sake. Vinegar, cemedine, and strong acidity. Bitter due to the high rice polishing ratio. Koji rice 60%, Kake rice 73
At the event in front of Corona, they were going to serve 27BY 35% Jundais, which was served as the 2035 commemorative sake for the 100th anniversary. What do you think? The Reiwa Memorial Sake was 3,000 yen, UTAGE was 6,800 yen, and Shizuku Shibori was 5,000 yen.
Drinking 2BY Juganmu 70%. This is a product of Wakanami that you can buy at the supermarket. I felt the sweetness and umami were stronger than last year's. The rice polishing ratio is 70%, but the bitterness is not strong. It has been a long time since I drank Wakanami sake, but as I thought, the cup goes on. It is delicious.
