Saitama Junmai Bindings 12th stage We didn't have a ginjo, so we bought a Daiginjo. It's clean and dry. Slightly fruity aroma. It was a sake from Gyoda City, where I was born and raised, where it attracted a lot of attention at Nobo no Shiro and Rikuoh.

Saitama Junmai-shibari No. 10 Suzuki Shuzo "Shirazuru-jo". I didn't have time to go out and buy it, so I bought it by mail order. It's fruity and has a clean aftertaste. This is the type of sake that you can gulp down again.

Saitama Junmai Binding 7th stage The Daiginjo from Haroun Shuzo Brewery is what got me into drinking sake. Before that, I didn't even drink much alcohol... It's clean and refreshing with no messiness. It's spicy. It looks like it's going to be in the Zensho group, but it would be nice to be able to drink this at Sukiya or something...

This is the 6th stage of Saitama Junmai-bari, or Junmai-bind. It is very dry and refreshing. At first, I thought it tasted like an amazake (I know I shouldn't drink it in such a vulgar way...), but as I gulped it down, I began to feel the taste of amazake.

Saitama Junmai Bindings 5th stage I think it is probably one of the mellow ones (it doesn't have a clean taste...). It's interesting that the same Junmai Ginjo from Saitama has different tastes.
