The first sip is sweet, but the gentle sweetness and crispness keep you coming back for more. Summer sake is also very different. I prefer it to the ones with a lot of acidity.
I drank it assuming it was sweet, but the entrance is clean and refreshing. I couldn't tell the raw yeastiness with my stupid tongue. The back palate has a slightly unusual bitterness. I also felt it in other brands of Sake Mirai, so maybe it is peculiar to this rice!
The description of the rice on the back label is nice.
It is unfiltered raw sake, but it is not heavy as it is 15 degrees. There was a slightly fizzy feeling only when it was opened.
As the name suggests, it has a strong acidity. The aftertaste is very strong.
