Bitterness is also strong. When the temperature rises and sweetness appears, it is well-balanced. Body Full-bodied. Full-bodied and heavy. 100% Hitogochiki from Nagano Prefecture Junmai Sake Unfiltered unpasteurized sake 55% koji rice, 70% kake rice 15℃ (59°F) About 14 days after opening Freshly cold from the refrigerator Appearance Nearly colorless, slightly yellowish crystal. No turbidity. Aroma Fresh aromas floral, fruity Flavor Fresh, light sweetness on the palate, followed by a slight bitterness. The palate is fresh, light and sweet on the palate, with a slight bitterness The acidity is fresh with a hint of citrus. The acidity is fresh and citrus-like. Overall impression It has been a while since it was opened, but the freshness of the bottle has not been lost. The freshness of the freshly opened bottle is maintained. The lightness of the flavor will be useful in both pre-meal and post-meal situations. Sakeware Tasting glass Matching Meals ◎Multigrain bread with salted butter ◎Carrot Rapé with mustard Fat multigrain bread A good pairing that allows the milky and oily flavor of butter to flow through easily. The carrot rapé with mustard enhances the bitterness of the mustard, but also brings out the sweetness and flavor of the carrots, which is a good impression. I thought it would go well with the nutty multigrain bread, but it made a better impression with the butter!

Aburacho Sake Brewery Kaze no Mori ALPHA5 The Quest for Heated SAKE 80% Akitsuho from Nara Prefecture 14% (with a little bit of sweetness) 5 days after opening, 6 days after opening Warmed to 60°C (tobikiri kan) to kan-kan Appearance Greenish yellow No turbidity. The richness of the color has slightly deepened since it was opened. Aroma Slightly more alcoholic than when freshly opened. Slightly chestnut-like aroma. As it cools down, it has a soybean-like aroma similar to that of miso. Flavor Nuts like peanuts and almonds Mochi Spiciness is reflected on the tongue when fully absorbed into the mouth Overall Impression I would drink it early in the first day after opening if possible. It gradually loses its balance, but it gives you a different face for it. Sake cup Sake cup that works well Meals to be served with sake Fat oden Carrot rapé It is especially good with eggs with more mustard, and carrot rapé with mustard. The bitterness of the mustard masked the weakness of the sake, giving it a rounded flavor.

Aburacho Sake Brewery Kaze no Mori ALPHA5 The Quest for Heated SAKE 80% Akitsuho from Nara Prefecture 14% (with a minimum of 2.5 liters) Second day after opening Start cold today Appearance No change No more bubbles from carbonation Aroma More subdued than yesterday. Sweet roasted chestnut notes. Flavor The freshness is more mature and rounded in a good way. The acidity, in particular, has mellowed. The acidity, in particular, has become milder, which compensates for the bitterness and sweetness, and is more cohesive. Body The carbonation is gone and the body is rounder. Soft mouthfeel with no spines. Overall impression Based on yesterday's impression, I thought it would go well with sashimi. Today, I seared a mackerel and served it with a side dish. It was a perfect match! It blends well with the acidity of the pickled mackerel without accentuating the fishy smell of the fish. I didn't try heating it up, but it's a good match even when served cold. Sake cup Sake cup Mixed meal ◎Seared shime saba (with wasabi and soy sauce) Fat mackerel Shiitake mushrooms in sweet potato stew Vinegared ginger (gari's sour taste wins too much) Meals you would like to enjoy grilled fish, grilled mackerel with mirin

Aburacho Brewery Kaze no Mori ALPHA5 Heated SAKE Exploration 80% Akitsuho, Nara Prefecture 14% (with a minimum of 2.5 liters) Appearance Slightly greenish yellow No nigorigo Carbonated with bubbles Top Notes iodine and green laver when fresh from the refrigerator Aroma Banana, oily dairy, maple syrup, and a hint of espresso after the temperature range is raised. Fruity aromas, but I can't tell. Flavor Cold, the first thing you notice is a light sourness, later sweetness and a hint of bitterness, well balanced. When heated, the acidity becomes more pronounced, making it slightly difficult to drink. Best when cooled (10-20℃), it has a bitter taste but still has body, making it suitable as a mid-meal drink. Body Lightly carbonated and pleasant to drink when cold. Medium-bodied when cooled and warmed, it has a moist body that masks the mouthfeel. Overall impression Best served warmed or chilled I thought it would go well with seaweed, but it didn't. I'd like to try it with sashimi Matching Meals Steamed Chinese cabbage, steamed pork and steamed beef Seasoned laver (strong flavor)
