This is a limited edition sake made by Yoshida Shuzo of Gassan using the Benno Mai grown in the Hita district of Yasugi City.
En-no-Mai is only about Kaishun and Jugyohi, the only sake rice from Shimane registered in 2019, that has yet to be commercialized.
It is a junmai ginjo, but the aroma is so fruity and gorgeous that it can be called a junmai daiginjo
The taste is sweet and rice-like until you swallow it, then you can feel the bitterness and acidity of the rice. go out
It's easy to drink, but the taste itself is relatively substantial.
My stupid tongue might not suspect that I'd be blind and call it a Junmai Daiginjo at all...
