Hachisen was given to me by a friend. It is sweeter and more acidic than the sake I usually drink. The less pungent taste allows me to savor every sip of sake. The spring pink label is a nice touch.

Sawanotsuru's vintage old wine 1991 and 2010. 1991 I was looking forward to drinking this sake to see what it tasted like when it was made before I was born. The deep, dark, and unique flavor spread out as soon as I took a sip. The aroma is very mellow and has a slight bitterness like black beer. It goes well with vegetable stew. 2010 The moment it enters the mouth, it has a sweet, sweet, vanilla-like aroma. The mouthfeel is lighter and fresher than 1991. Although we had prepared Japanese food for today's snack, it has a gorgeous flavor that would go well with Western food. Both have their charms.

This fantastic sake was used as the toast for the working dinner at the Ise-Shima Summit. It is easy to drink and goes well with any dishes, with a sweet and mellow aroma that makes you think it is crisp and spicy. The moment you put it in your mouth, you feel the fruity aroma and the soft texture on your tongue. One of the best made in the village of ninja.

Because it looks and smells like strawberry milk made with red yeast, I imagined it would be quite sweet, but the moment I took it into my mouth, I felt a gassy, light sweetness, and a refreshing aftertaste that seemed to disappear from my mouth. I drank it as if it were a dessert, but it is a drink that goes well with meat as well.

The ultimate food sake, which took four years to shape by Eazu at the Hakurakusei brewery. Limited edition of 600 bottles. The label is cute. When I opened the bottle, I felt sourness as well as sweetness, but after letting it sit for a while, it has a fluffy rice aroma that is more like a flower aroma than a fruity one. Goes well with sweet sashimi such as kampachi.

This 131st anniversary Imi was released as a one-year delayed celebration of the 130th anniversary, limited to 5,000 bottles. The label depicts the appearance of the brewery, the sake rice, and a text that conveys the brewer's feelings. Sweet, fruity, and easy to drink. Goes great with gizzards and salmon.
