This is the second repeat bottle. It has a mellow umami flavor and is pleasant to drink. It has a little bit of a tangy taste, but it is delicious. It has a clean aftertaste. I heard that they use a yeast that is not usually used for hiyaoroshi.

Strong gassiness. It is said that the brewer aims for a more complex flavor by deliberately keeping the rice polishing ratio low. It tastes better on the third day or so. The aftertaste is quite dry and clean. There is not much sweetness. It is better to chill it properly and pour it little by little.

Gentle and mellow on the palate, with a delicious aromatic sweetness. It also has a clean dry aftertaste. If I had to say something, I would say that the sweetness and the umami are not in harmony. So, only the sweetness is strongly felt at first. As usual, the costuming is excellent.
