I waited until the bottle had settled down and slowly opened the bottle again. I slowly pour it into a glass and taste it. What? Oh? It was completely different from the Gohyakumangoku Murasaki Uchu I drank the other day. It has a soft sweetness, but the taste is refreshing. It also has a different impression from doburoku. The brewery is now called Hirota Shuzoten, but it appears to have been changed to Shiwa Shuzoten. Now, Shiwa is made by the first female Nanbu Touji. Sake brewing may have been a woman's domain in the first place. Well, I'm just a consumer, so I'm saying this regardless of any ties. This sake is very smooth to the palate and goes in very smoothly. And the aftertaste smells like an old grandma's house with a thatched roof. What is this? It reminds me of my childhood. I looked at the website. I see that they use wooden vats. I see, now I know what modern classic means. They seem to be an anti-rationalization sake brewery where everything is made by hand. Another sake brewery I want to support.

I came across it. I was hooked by the soft, gentle and refreshing aroma and taste. I want to try all of these brands. Akabu is like a first love. I arrived at the refrigerator without even glancing at the Beaujolais something corner. There it was. Junmai Daiginjo. I was tempted to open it right away, but after running some errands, I finally opened the bottle. While sharing it with the altar, I put the spout on my glass as well. I said wow! I said wow in real life. Me, serving one after the other to my wife, daughter, and other adults. I said, "Nah? Nah? Right?" I'm not the one who made it, but for some reason I'm a little proud of it. Finally, he said, "Don't drink it without permission! It's mine!" because it was so delicious. It was not because of the small size of the bowl.

Akabu's new Junmai Ginjo sake NEWBORN. Purchased from a bustling liquor store in the evening, which is probably a future delivery. It is a junmai daiginjo, but just a bit spicier. Personally, the moment I put my mouth on this sake, I remember the days when my grandfather, grandmother, and relatives were all alive and laughing and sharing sake with each other. The label may change, but the essence of what is inside remains the same. It is a sake that makes me cry personally.
