The brewery is now called Hirota Shuzoten, but it appears to have been changed to Shiwa Shuzoten.
Now, Shiwa is made by the first female Nanbu Touji.
Well, the word "toji" comes from the word "toji," which means "head of a household. The word "toji" comes from "toji," which is a pun on "toji" and means to respect a senior female brewer.
Sake brewing may have been a woman's domain in the first place.
Well, I'm just a consumer, so I'm saying this regardless of any ties.
This sake is very smooth to the palate and goes in very smoothly.
It goes in so smoothly that at first I felt it wasn't enough, but the more I sipped it, the more luscious it became.
It seems to be a small sake brewery with four brewers, which makes me want to support them more and more.
