The sharp and sharp Hatsukame Special Junmai. A staple at ryokans in Izu. It is always available! A bottle of Shizuoka sake that goes well with any dish and does not taste like an afterthought.

I love Izu and often stay there. This is a fresh special junmai sake I bought at a liquor store in Ito. It is truly a made-in-Shizuoka sake, brewed with Shizuoka rice and Amagi spring water. It has a mild, dry but mellow taste, and goes perfectly with the dried sardines and kagosei fish paste that I bought with it. I would like to buy it again!
Aeon Junmai Daiginjo series.
This is the second bottle from Kato Shuzo, following "Mukyoku". It is heavier and drier than Mukyu, but fruity and delicious from the first sip to the last. It became my favorite of the series (among the ones I drank).

Nakakumi polished 50%. It is refreshingly dry.
It comes in a white bag so it stands out on the sales floor.
We had it with oden last night, and it was just perfect with light-flavored oden. As the message from the brewer says, "Junmai Daiginjo for everyday drinking," it is an all-around sake that goes well with any dish. It has no personality, but....
This is the third bottle in the Aeon Junmai Daiginjo Series Tri.
It is neither sweet nor dry, but "umami".
This mild sake is brewed with Aomori rice "mashigura" and brewing water from the Oirase water system. It becomes sweeter when well chilled.
The more you drink it, the more gently sweet it becomes.
They say it goes well with avocado and shrimp salad or white fish carpaccio, but we didn't have such stylish snacks 😆😆.
I bought this bottle together with Hanaharu from the Aeon Junmai Daiginjo series.
I had had Ginban before and thought I liked the taste, but after Hanaharu, I guess it was too much, but the aroma was fishy and the taste was quite harsh. It might be better not to cool it down too much. I am drinking it while changing the temperature a little at a time, saying, "I think it would be better not to chill it too much.
