アラジンOn the shinkansen returning home from Hakata Station, we enjoyed the last remnants of our trip with Fukuoka Prefecture's local sake. It is a 55% polished junmai ginjo made by Kitaya of Yame City, Fukuoka Prefecture, which is famous for its tea. It was sold chilled, so we started drinking it cold. When you open the top lid, you can smell the aroma of koji, which is typical of sake, as well as the ginjo aroma. The mouthpiece is wide, so take a sip while being careful not to spill. You can feel the refreshing acidity and the sharpness of the alcohol. As it rolls around in the mouth, the sweetness and umami of the rice can also be felt, and the topping aroma is gorgeous. Even after drinking slowly and approaching room temperature, there is no stickiness or harshness because the rice polishing ratio is 55%, which is a luxurious polish close to that of a daiginjo. The sweetness and umami of the rice comes to the fore, and the acidity and slight astringency that lingers on the tongue in the aftertaste become noticeable, while the alcohol makes it feel more crisp and clean. It is not bad at room temperature, but I preferred it cold! I have to admit, I was licking my lips about the cup sake, sorry. I honestly thought I was underestimating sake in a cup, but I'm sorry, I didn't realize you could get this much authentic sake in a cup for about 350 yen. A cup of sake that will make you happy on the Shinkansen, and I just want to thank the sake brewer. I want to come back to Kyushu again to drink authentic sake 🍶.

遥瑛チチHigh 2nd drink. (2) Kanzansui Junmai Ginjo 55% polished This is another Fukuoka sake! I mean, another sake from Kitaya. It's good! This is the only one they sell 😅. I knew it would have a similar taste. It's light but for a second it's sweet and delicious 😁. They say it was made with the idea of "making a junmai ginjo that goes well with snacks from the Genkainada Sea"! But it was also perfect with nigiri sushi from Famima 👌.

seiraIt was introduced as a locally recommended sake at a small sake shop in Kagoshima. I heard it won some kind of award, but I don't remember. It has a melon and vanilla taste. It is surprisingly dry on the palate.

かずきOpened September 23, 2022 Purchased while traveling Clear and easy to drink ^ ^ No quirks, at worst, universal, at best, almighty! Well-balanced, beautiful sake 🍶. It has a good balance of sweetness, acidity, and bitterness, and I never get tired of it, whether it's for a meal or an evening drink! This should sell well 😁.
